Homemade Buttermilk Pancakes

Was it that long ago that kiddo used to ask me to make buttermilk pancakes? She loved them before she could talk in complete sentences - syrup, no butter. Now she adds the butter too because in her words she is a 'fat kid.'

Sometimes, she would have have friends over and rave to them about the pancakes. Then I'd pull out my mixing bowl and whip them up, breakfast, lunch, dinner, snack...it didn't matter. If I had the ingredients, I made them.

It comes as no surprise, I guess, that I relived all of that while mixing them up for dinner tonight. They turned out a little watery and a tad salty...but they were still okay.
